• 1 1/2 lb scallops

  • 1 T butter or olive oil

  • 2 teaspoons Herd Nerd Spice

  • kosher salt and pepper

 

Pat scallops dry and sprinkle one side lightly with Herd Nerd Spice and salt/pepper.  Place in a hot oiled pan on the stovetop (I use cast iron) spiced side down. Sear for 2-3 minutes. Add 1 T butter to pan and cook other side.  Remove from pan and serve immediately.
